Prepare fruit in a blender, food processor or by crushing.
Add sugar and lemon juice then stir to mix.
Sprinkle Ultra Gel in gradually, stirring constantly until all is mixed in.
Allow to stand 5 - 10 minutes to thicken then stir until smooth.
If a thicker consistency is desired, add more Ultra Gel one tablespoon at a time.
Package, seal, label and freeze for 6 - 12 months.
Yields about 5 cups (approx 80 - 1 Tblsp. servings)
Sugar can be adjusted to your preferences without affecting the consistency.
