Allow frozen concentrate to thaw.
Combine crushed fruit, lemon juice, and frozen concentrate.
Bring to a full boil over high heat, stirring constantly until smooth.
Remove from heat and sprinkle in Ultra Gel, stirring continuously with a wire whisk until smooth.
Return to heat and boil 1 minute, then remove from heat.
Immediately ladle into jars, filling to within 1/2 inch of top.
Affix lids and tighten securely.
Place in pre-heated bath and process for 35 minutes after water boils.
Yields about 2 pints ( 64 - 1 tablespoon servings )
