Cream of Broccoli Soup

Pectin free

Ingredients

  • 1 (14 oz.) can regular strength chicken broth
  • 1 t. dehydrated minced onion
  • 1 t. bouillon granules
  • 1 c. fresh or frozen chopped broccoli
  • 2/3 c. evaporated milk
  • 1/4 c. UltraGel

Directions

  1. Combine broth, onion, bouillon granules and broccoli in a heavy pan and cook, covered, until vegetables are tender.
  2. Add evaporated milk, then add UltraGel gradually with wie whisk, stirring constantly. 
  3. Simmer for five minutes, stirring occasionally. 
  4. Season to taste and serve immediately.
  5. GOOD IDEAS - try this recipe using 1 c. mushrooms, cauliflower, potatoes, or other vegetables.
